Another delicious meal is Spicy Chicken Rigantoni. This is a fairly easy meal to do during the week. However, I do have a confession. We cheat a teeny tiny bit on the original recipe. In all fairness though - we are just looking for a timesaver. Instead of chopping up the raw chicken breasts and then cooking it - we just buy a few packs of the already cooked and shredded chicken and it still tastes great! I am sure the original chicken is the way to go and much more delicious but at the end of the day we just want something easy and good and this meal accomplishes both!
